Easy Chickpea Veggie Burger
This is a quick meal perfect for a weeknight when you are looking to eat something healthy. All you really have to do is mix up your chickpea mix for the patties then cook.
I had quite a few ingredients because I wanted a ton of toppings like avocado, spinach, cucumbers, etc. You can really work with what you have around the kitchen.
For a low carb version, skip the bun and serve over a salad.
Chickpea Veggie Burger

Ingredients
- 1 package or can of chickpeas, rinsed and drained
- 1 small onion, shredded
- 2 garlic cloves, minced
- 2/3 cup bread crumbs
- Salt and black pepper
- 1 large egg, lightly beaten
- 1/2 tsp ground cumin
- 2 tablespoons vegetable oil
- 1/2 cup cheddar cheese, shredded
- 1/2 cup Gruyere, shredded
- 4 slices of tomato
- 8 slices of cucumber
- spinach
- 4 hamburger buns, toasted
- 1 avocado, mashed
Directions
- Process the chickpeas in a food processor. Remove and add in the onion to process.
- Mix chickpeas, onion, garlic, bread crumbs, egg and spices in a bowl. Form into 4 patties.
- In a large skillet, heat the oil over medium heat. Cook the patties on each side for 4 minutes. Top with cheese on the last minute of cooking.
- Serve with avocado, tomato, cucumber & spinach.
