Spicy Peanut Noodles

This is a tasty, healthy thai dish that makes a perfect dinner :)

Ingredients: You can swap the shrimp for chicken or tofu to suit your tastes. Just make sure to add a ton of veggies!

1) Cook noodles according to package.

2) Mix ingredients for sauce and microwave.

3) Cook chicken in oil in a skillet.

Finally, throw your veggies in with the chicken. Cook until tender. Serve with noodles, sauce and crushed peanuts.

Spicy Peanut Noodles Recipe

Ingredients
  • 8oz flat noodles
  • 2 teaspoons peanut oil, divided
  • 1 lb chicken breast, cut into small pieces
  • salt & pepper
  • 1/2 lb shrimp, cooked and peeled
  • 1/2 cup shelled frozen edamame
  • 2 green onions, chopped
  • 1 cup napa cabbage, shredded
  • 1 cup snap peas
  • 1 cup bean sprouts
  • 2 garlic cloves, minced
  • 1 egg
  • 1/4 teaspoon sesame oil
  • 1/4 cup peanuts, crushed
  • SAUCE
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 4 teaspoons granulated sugar
  • 4 teaspoons peanut butter
  • 2 tablespoons water
  • 2 teaspoons chili garlic paste (optional for spicy)
Directions
  • Cook noodles according to package.
  • Mix ingredients for sauce. Microwave for 20 seconds and set aside.
  • Heat 1 teaspoon peanut oil over medium heat in wok or large skillet. Cook chicken pieces until no longer pink. Remove and set aside.
  • Heat another teaspoon of oil in the skillet. Cook vegetables until softened (3 - 4 minutes). Remove and set aside.
  • Whisk egg in a bowl with sesame oil. Pour in skillet over heat and scramble. Add back in veggies, chicken as well as already cooked shrimp and noodles. Pour sauce over top and stir until warm.
  • Serve with crushed peanuts on top.
